As we round the curve into August, things are heating up. You want to take advantage of the summer sunshine, but might find yourself getting a little overheated every once in a while. Why not cool down with a delicious and refreshing fruit popsicle? Whip up a batch of these treats to beat the heat all summer long. Here is a great recipe!

  • 1 peach, cut into ½ inch slices (this should yield about ½ cup)
  • ½ cup of blueberries
  • 2 kiwis, peeled and cut into ¼ inch rounds
  • ¾ cup of finely chopped strawberries
  • ½ cup of raspberries
  • 1 ½ to 2 cups of 100 percent white grape juice or fruit punch (your preference)

In a large mixing bowl, combine all of the fruit and stir until it is evenly combined. Then grab a spoon and spoon the fruit into eight 3-ounce popsicle molds. The more different kinds of fruit you can fit into each mold, the more colorful your popsicles will be!

Pour enough grape juice or fruit punch into each mold to cover the fruit. Insert popsicle sticks in the middle of each mold and freeze until solid. Then, enjoy!
